Pineapple Angel Food Cake

Combine:
one package angel food cake mix
20-oz can of crushed pineapple

Put in ungreased 9x13 pan. Bake at 350° for about 40 minutes.

Serve with whipped cream.

Otameal Bread

Combine:
2 cups boiling water
1 cup rolled oats
1/3 cup shortening
1/2 cup light molasses
4 tsp salt

Cool to lukewarm.

Add 2 packages yeast, compressed or dry granular; mix well.

Blend in 2 eggs

Add 5.5 cups sifted Pillsbury's Best Enriched flour; mix until dough is well-blended. (This dough will be softere than a kneaded dough.) Place dough in greased bowl and cover.

Store in refrigerator or cold place at least two hours or until needed.

Shape chilled dough into two loaves on well-floured board; place in greased, 9x4x3-inch pans and cover.

Let rise in warm place (80° to 85°) until double in bluk, about 2 hours.

Bake in moderate overn (375°) for one hour.

Makes two loaves.

Anna Pillsbury speciality; excellent toasted, too.

Honeycomb

Honeycomb:
1 cup sugar
1 cup dark corn syrup
1 Tbsp whtie vinegar
1 Tbsp baking soda

Chocolate coating:
1 12-oz package semisweet chocolate chips
3 Tbsp solid vegetable shortening
1 ounce unsweetened baking chocolate, broken into pieces

To prepare the honeycomb:
Line 8x8 in baking dish with foil. Butter generously. Set aside.

In 2-quart microwave-safe bowl, combine sugar, corn syrup, and vinegar. Cook on high (600-700 watts) for 3 minutes, stirring several times. Continue to cook 7 to 10 minutes or until mixture has thickened and candy thermometer registeres 300 degrees (or until small amount of mixtrue separates into hard and brittle threads when dropped into very cold water). Quickly stir in baking soda (mixture will foam), blending completely. Pour into prepared dish, tilting to cover bottom evenly. Cool at room temperature for 1 hour or until firm. (Note: Do not refrigerate.) Break honeycomb into pieces and set aside.

To prepeare chocolate coating:
In 2-quart microwave-safe bowl, combine chocolate chips, shortening, and baking chocolate. Using wood sppon, stir through to melt thoroughly. (Note: Chocolate will not appear melted until stirred; do not cook chocolate, just heat long enought ot soften.)

To finish candy:
Dip honeycomb piecs into chocolate, covering completely. Place on wax paper. Cool at room temperature.

Sponge Candy

1 cup sugar
1 Tbsp baking soda
1 cup dark corn syrup
1 Tbsp vinegar

Combine sugar, syrup, and vinegar in large sauce pan (large so it doesn't foam over) and cook over medium heat. Stirring until sugar dissolves.

Continue cooking to 300%#176; without wtirring. Remove from heat and stir in baking soda. Mix will (this will foam) and pour into 9x9x2 buttered pan. Cool and break. Dip in chocolate if desired.

Angel Crisps

1/2 cup sugar
1/2 cup brown sugar
1 cup shortening (half butter)
1 egg
1 tsp vanilla
2 cups flour
1/4 tsp salt
1 tsp baking soda
1 tsp cream of tartar

Cream first five ingredients. Add dry ingredients. Form into balls, dip top half in water, then granulated sugar. Place on ungreased baking sheet. Press down with finger. bake 425° for 8-10 minutes.

Makes 4 dozen.

Chocolate Waffle Iron Cookies

1/2 cup butter
3/4 cup sugar
2 (1-oz each) squares unsweetened chocolate, melted
1 tsp vanilla
2 eggs
2 cups flour
1/2 tsp salt

Chocolate frosting:
1 Tbsp butter
2 Tbsp milk
1 cup powdered sugar
1 (1-oz) square unsweetened chocolate, melted
1/2 tsp vanilla
dash of salt
pecans

To make cookies, cream butter and sugar well. Stir in melted chocolate and vanilla. add eggs and mix thoroughly. Stir in flour and salt. Preheat waffle iron with medium setting.

Drop dough by teaspoonful (two per square). Close cover and bake for 1.5 minutes. Remove and frost with Chocolate Frosting.

To make frosting, heat butter and milk together. Beat in chocolate and powdered sugar. Add vanilla and salt. Frost and garnish each cookie with a pecan.

Ting A Lings

1 package (6 oz) chocolate chips
1/2 cup salted peanuts
1 can chow mein noodles

Melt chocolate over hot (not boiling) water. Pour melted chocolate over mixture of peanus and chow mein noodles. Toss gently until thoroughly blended. Drop from teaspoon onto waxed paper. Chill to harden. Makes about 20.

Optional: Substitute 1 cup miniature marshmallows for salted peanuts.

Brownie Cupcakes

1 package fudge brownie mix (family-size)
2 eggs
1/4 cup water

Line 12-16 muffin cups with paper liners. in large mixing bowl, combine brownie mix, eggs, and water. By hand, stir 50-75 strokes. Fill prepared muffin cups 2/3 full. Bake at 350° for 25 to 30 minutes. (Top will be shiny and slightly soft to the touch.) Cool completely. If desired, frost.

Chocolate Cherry Bars

1 pkg fudge cake mix
1 can cherry pie mix
1 tsp almond extract
2 eggs beaten

Mix well by hand and bake at 350° for 20-30 minutes on greased & floured jelly roll pan.

Frosting:
1 cup sugar
5 Tbsp margarine
1/3 cup milk

Boil and stir constantly for 1 minute. Add 1 cup chocolate chips and stir smooth.

Chocolate Chip Oatmeal Cookies

Combine:
2 cups + 1 Tbsp flour (another 1/2 Tbsp if margarine)
3/4 tsp baking soda
2 tsp baking powder
1/2 tsp salt

Cream 2 cups brown sugar (packed) with 1 cup soft butter. Add 2 eggs, 1 tsp vanilla, 1 tsp water and stir in flour mixture. Add 1 1/2 cups oatmeal and 12 oz chocolate chips.

Bake at 375° for 8-10 minutes if rounded tsp or 10-12 minutes if rounded Tbsp. Lightly grease sheet if non-stick pan.

I agree with Eldora; these are delicious!

Meringues

6 egg whites
2 cups sugar
1 Tbsp vinegar
1 tsp vanilla

Beat egg whites very dry, add sugar very gradually and beat in electric mixer at low speed 10 minutes. this entire process should take 15 minutes.

Add vinegar and vanilla and beat on low speed 15 minutes more, scraping down sides of bowl often. Drop in mounds on brown paper. Hollow out top with spoon. Bake 30 minutes in slow oven (225°). After the first 20 minutes, exchange bottom baking pan with top pan so bottoms of both will be crusty.

Cool slightly before removing from paper. Put ice cream in center and top with hot sauce (below).

Hot Rum Sauce
1 cup whipping cream
72 rum butter toffees

Place cream in top of double boiler over hot water. Add candies and heat until melted.

Meringue

1 Tbsp cornstarch
2 Tbsp cold water
1/2 cup boiling water
1 tsp fresh lemon juice
3 eggs whites
6 Tbsp sugar

In small saucepan, mix cornstarch and cold water until blended

Stir in boiling water, put over medium heat and bring to boil, stirring constantly. cook, stirring 2 minutes, or until thickened.

Remove from heat and set pan in small amount of cold water to hasten cooling to room temperature.

Add lemon juice to egg whites and beat in electric mixer or with rotary beater until whites stand in soft peaks.

Add cornstarch mixture all at once and beat until well blended.

Overnight Coffee Cake

2/3 cup margarine
1 cup white sugar
1 cup brown sugar
2 eggs
1 cup buttermilk
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt

Topping:
1 cup brown sugar
1/2 tsp nutmeg
1/2 cup nut meats, chopped

Cream together margarine, white sugar and brown sugar. Add and beat well eggs. Add buttermilk. Combine and bet in flour, baking powder, soda, cinnamon, and salt. Place in greased 9x13-inch pan. combine topping ingredients and sprinkle on bread. Place in refrigerator overnight. Bake at 350 degrees for 45 minutes. Serve.

Eldora's Notes:
Very good, easy. Try a little less white & brown sugar in cake and reduce topping brown sugar to 1/2 cup and just 1/4 tsp nutmeg in topping.

Angel Crisps

1/2 cup sugar
1/2 cup brown sugar

Lemon Angel Dessert

1 large angel food
1 lemon juiced plus orange juice to total 1 cup
1-3oz package lemon Jello
3/4 cup boiling water
3/4 cup sugar
1/2 pt whipped cream

Dissolve Jello in boiling water. Add sugar, lemon & OJ mix, and a dash of salt. Chill till starts to thicken. Beat (with mixer) until frothy. Fold in 1/2 pt of whipped cream.

In 9x13 pan, put thin layer jello mix on bottom. Break cake into pieces and put in pan. Pour rest of juice mix on top of cake and push into crevices. Chill overnight.

Eldora's notes:
Excellent. It took 2 oranges to make the juice mixture.

Georgie's Sauce for Mixed Fruit

3/4 cup juice from canned pineapple
1/3 cup orange juice
1 Tbsp lemon juice
1/2 cup sguar
2 Tbsp cornstarch

Cook & put on fruit after cooled.

Eldora's notes:
drain fruite well; use less sugar

Bonnie's Strawberry Pie

Crust
1 cup flour
1/4 lb butter
2 Tbsp sugar

Mix like pie crust, pat into pan. Bake at 375° for 10-15 minutes.

Filling
Enough berries to fill pan (9" pan, at least 1 qt)
1 cup water
1 cup sugar
2 Tbsp corn starch

Cook until thick and clear then add 1/2 package strawberry Jello (small size). Cool and pour over strawberries. Chill well. Serve with whipped cream.

Cherry Fruit Salad

Mix together:
1 (21-oz) can cherry pie filling
1 (20-oz) can pineapple chunks, drained
1 (20-oz) can fruit cocktail, drained
2 bananas, thickly sliced
2 unpeeled apples, cut up

Cover and chill until serving time. Makes about 8-10 servings.

Golden Parmesan Potatoes

6 large potatoes (about 3 lbs)
1/4 cup sifted flour
1/4 cup grated Parmesan cheese
3/4 tsp salt (less)
1/8 tsp pepper
1/3 cup butter
chopped parsley

Pare potatoes and cut into quarters. Combine flour, cheese, salt, and pepper in bag. Moisten potatoes with water and shake a few at a time in bag coating potatoes well with cheese mixture.

Melt butter in 13x9 baking pan. roll potatos in butter and placein single layer in pan.

Bake 375° for about 1 hour. Turn once during baking. When golden brown may sprinkle with parsley (not necessary).

Serves 4-5

Porcupine Meat Balls

Combine:
3/4 pound ground beef
1/4 pound ground pork
1 small onion minced
1/3 cup raw rice
1/3 cup bread or cracker crumbs
1 egg
3/4 tsp salt
1/8 tsp pepper

Pour over meatballs:
1 can tomato soup diluted with 1/2 cup water

Bake in deep, greased casserole at 375° for 1 hour

Eldora's Notes:
over for easier recipe [BELOW]

1 lb ground beef
1/4 cup raw rice
1/2 cup chopped onion
1 1/4 tsp salt
1/8 tsp pepper
1 tsp Worcestershire sauce
1/4 cup milk

Mix all together and form into balls.

In baking dish, mix together 1 can cream of celery soup and 2/3 cup water. Add meatballs. Bake, uncovered, 1 1/4 hours, at 350°, turning several times.

Bonnie's Grey Poupon Potatoes

5 Tbsp Grey Poupon Dijon mustard
2 Tbsp olive oil
1 clove garlic, chopped
1/2 tsp Italian seasonings
6 medium red-skinned potatoes (about 2 lbs), cut in chunks

Palce potatoes in greased 13x9x2 pan or on shallow baking sheet.

Toss with mustard mix and bake at 425— for 35-40 minutes, stirring occasionally.

Serves 4.

Granola

1 medium-size ripe banana, sliced
1/4 cup packed brown sugar
3 cups old-fashioned rolled oats
1/2 cup whole bran cereal
1/2 cup wheat germ
1/2 cup sunflower kernals or chopped nuts
3 Tbsp oil
1 tsp cinnamon, or to taste
1 cup raisins

In large bowl mash banana with sugar. Add remaining ingredients except raisins; mix lightly. Spread in single layer in 15x10x1-inch jelly-roll pan. Bake in preheated 325° oven 30 minutes, stirring every 10 minutes for even toasting. remove from oven. Stir in raisins; cool in pan on rack. Store in air-tight refrigerator. Makes 5 cups.

Not too sweet, this granola is good sprinkled on hot cereals, yogurt, or cottage cheese, or eaten as is.

Baked Cream Potatoes

1 medium onion, finely chopped
3 Tbsp chopped green pepper
4 Tbsp butter or margarine
1 Tbsp chopped pimiento
2 1/2 Tbsp flour
2 cups milk
salt & pepper
3 cups cubed, cooked potatoes (3/4 inch cubes)
3/4 cup shredded American cheese (or as much as you wish)

Cook onion and green pepper in butter about 5 minutes. Stir in pimiento and flour. Add milk gradually and stir and cook until thickened. Season to taste. Add potatoes. Pour into 1 1/2 qt casserole. Top with cheese (or mix in).

Bake 350° for 30 minutes unless made the day before & refrigerated—then bake 1 hour or so.

Makes 4-6 servings

Excellent with ham.
Adele likes.
Can use a few more potatoes for this amount of sauce.
I use more cheese sometimes most of the time!!

Spätzle (drop dumplings)

2/3 cup flour
1/6 tsp salt
1 egg lightly beaten
1/6 to 1/3 cup milk
1 Tbsp melted butter

Combine and drop by very small drops or push through colander onto boiling soup.

Spinach Lasagna

1 pound monterey jack cheese, grated
8 oz cooked lasagna noodles
2 pkg frzen chopped spinach, cooked & drained
1 cup grated parmesan cheese
2 punds cottage cheese (may substitute part sour cream)
2 eggs
1 Tbsp parsley
salt, pepper, garlic powder to taste (1/8 tsp or less??)
2 Tbsp mlted butter
1 chopped tomato for color

Mix cottage cheese, eggs, seasonings.
Grease 13x7 pan
Layer

  1. noodles
  2. cottage cheese mixture
  3. monterey jack cheese
  4. spinach
  5. parmesan
  6. repeat

Drizzle with melted butter.

Bake at 350° for 30 minutes.

Serves 8 generously.

Eldora's notes:
Very good. Chopped tomato (or pimento) on top looked pretty. Recipe from Elinor Ostman, St. Paul paper.

Meat Balls

Combine and roll in flour:

1 1/2 pound hamburger
1 1/2 cups soft bread crumbs
1/3 cup onion
1 tsp salt
1/4 tsp pepper
1/4 tsp nutmeg
3 Tbsp fat (butter!)

Brown in fat. Add 1/2 cup hot water and small bay leaf.

45 minutes at 350°

Dorothy's Almond Rusks

1 cup sugar
1/2 cup butter
2 eggs
1 tsp [baking] soda
1 tsp almond extract
1/2 cup ground almonds or walnuts
1/2 cup sour cream
3 1/2 cups flour

Put all together and mix. Make two long rolls on cookie sheet (flour on jelly roll pan; no grease).

Bake 300° for 45 minutes

When light brown, take out. Cut into 1/2 inch slices. Toast on each side in oven 250 to 300° for 35-45 minutes.

Lemon Bars

Mix and pat into 9x9 pan and bake 15 minutes at 350°
1 cup flour
1/2 cup butter
1/4 cup confectioner's sugar

2 eggs beaten
1 cup sugar
2 Tbsp lemon juice
1 Tbsp flour
1/2 tsp baking powder
Grated rind of lemon

Mix together and pour over the baked crust. Then bake 25 minutes at 350°

Eldora's Notes:
Double recipe to use 12x9 pan
bake first 20 min and second 25 minutes
sprinkle with confectioner's sugar

American Chop Suey

1 pound ground round steak
1 large onion, chopped
3/4 cup rice, not cooked
2 cups tomatoes
1 tsp salt
2 Tbs fat
1 green pepper, chopped
1 cup cut celery
1 can mushrooms and juice

Brown the steak in fat. Add remaining ingredients and cover tightly. Bake in oven at 350° for one hour.

Becky's note:
This recipe is not written by Eldora, I need to confirm with her, but my mom thinks it is Helen's (Eldora's sister) recipe.

Edith Goplin's Bran Muffins

2 cups boiling water
2 cups Nabisco 100% Bran
2 sticks oleo
3 cups sugar
4 beaten eggs
1 quart buttermilk
5 cups flour
5 tsp [baking] soda
1 tsp salt
4 cups Kellog's All Bran

Pour boiling water over N. Bran & oleo. Let cool. Add sugar, eggs, and buttermilk. Stir. Add flour, soda, salt, and All Bran. Mix well. Put in covered container in refrigerator.

Dip into—not stirring. Bake in greased muffin tins at 400° for 18-22 minutes. This batch makes 5 or 6 dozen and keeps well in refrigerator a month. (You could make 1/2 batch)

These muffins are so good and so easy ot make for any meal.

Phylis Elsing's Patrician Potatoes

4 medium potatoes
1 1/2 cups small curd cottage cheese
1/3 cup sour cream
1 Tbsp minced onion
2 tsp salt
some pepper
2 Tbsp melted butter
1/4 cup toasted slivered almonds

Mash potatoes, add cheese & seasonings. Blend. Put in greased casserole. Brush top with the melted butter. Bake 350 degrees for 30 minutes. Place under broiler to brown top and sprinkle with almonds.

Refrigerator Mashed Potatoes

5 lbs potatoes (9 large), cooked & drained, mash (I use mixer), then add:

2- 3oz pkg cream cheese
1 cup dairy sour cream
2 tsp onion salt (*or to taste)
1 tsp salt (*or to taste)
1/4 tsp pepper
2 Tbsp butter or margarine

Beat until smooth and fluffy. Store in refrigerator container up to 2 weeks.

Place desired amount in greased casserole. Dot with butter.

Bake 350 degrees for 30 minutes or till heated through.

If you use full amount, use 2 quart casserole and heat longer (45 minutes to 1 hr).

Chocolate Sauce (from war time)

2 squares of chocolate
5 Tbsp honey
salt
(some butter if you like)

Seve hot on ice cream.

Chocolate Fudge Sauce

1- 6oz package chocolate chips
1 tsp butter
1/2 cup honey
3/4 cup evaporated milk

Heat chips till they melt (WATCH!)

Add butter & honey: stir

Add evaporated milk and heat till hot.

Can serve cold.

Christmas Salad

1 pkg lime jello
1 cup pear juice
1 cup sieved pears

Let set to jelly stage then beat smooth and fold in

1 cup cream, whipped
2 Tbsp salad dressing

Beef Sandwiches (for buns)

4 cups water
1 pkg Lipton onion soup mix
4 bouillon cubes
1/2 to 1 tsp garlic powder
4 lbs roast beef

Bring first four ingredients to boil and pour over prepared roast beef (below).

Cook roast beef covered for approximately 8 hours at 250 degrees.

Shred beef and remove fat.

Eldora's notes
Could add tsp sugar and a little cinnamon to broth.

Use bottom round or rump roast.

Betty Jarchow's Salad

broccoli & cauliflower cut up, about a cup or so
red & green grapes cut in half, abut a cup or so
3/4 cup celery chopped fine
can or 2 mandarin oranges, drained
bacon pieces, fried crsip
about 1/2 cup sunflower seeds and cashews (cut up)

dressing:
1 cup mayo
2 Tbsp vinegar
2 Tbsp sugar

Prepare day ahead if like, but add nuts & bacon just before serving.

She was a caterer; mother of Neil's classmate.

Simple Shredded Sunshine

Baked shredded carrots (could be cooked on top of stove 5-10 minutes)

Shred peeled carrots into buttered casserole

Add salt & pepper (maybe a little sugar) and dot with butter or margerine (no water).

Cover and bake 1/2 hour at 350 degrees.

Goes well with meat loaf & scalloped potatoes.

Cream Cheese Tortes

3-8 oz cream cheese (can use lite)
3 eggs
3/4 c sugar
2 tsp vanilla
vanilla wafers
cherry flavored pie filling

Combine first 5 ingredients (all except pie filling) & mix in mixer til smooth. Place one wafer in bottom of each of 24 paper liners in muffin tin. Fill 3/4 full. Bake at 350 degrees for 20 minutes (approx) or until tips begin to crack. Cool. Just before serving, top with pie filling. Tortes may be frozen. Keep in refrigerator.

I like to make the little ones. Greg used to love these!

Adele's Lemon Dessert

1 qt vanilla ice cream
1-6 oz can frozen lemonade
add a little yellow coloring if desired
graham cracker crust or just crumbs top & bottom

Fresh Peach Pie

1 unbaked pie shell (9 inch)
5-6 peaches, peeled & sliced--thick chunks
combine:

  • 2/3 c sugar
  • 1 1/2 T flour
  • cinnamon

2/3 c cream

Place 1/2 of sugar & flour mix in bottom of shell. Place sliced peaches on top. Add remaining sugar & flour mix on top. Pour cream over contents.

Bake 350 degress for 50-60 minutes.

Mom's Banana Bread (Edith *??* Anderson)

1/2 c shortening (use butter, oleo stick, or crisco)
1 c sugar
2 beaten eggs (I use mixer so I don't beat separate)
3 T sour milk (buttermilk or make milk sour with half tsp or 1 of vinegar)
3 med bananas, mashed (I mash first in small mixer bowl)
2 c flour
1 tsp soda
1/4 tsp salt

loaf pan - 350 degrees - 1 hour

Mandarin Salad

1/2 cup sliced almonds
3 Tbsp sugar
1/2 head iceberg lettuce
1/2 head romaine lettuce
1 cup chopped celery
2 whole green onions, chopped
1 11-ounce can mandarin oranges, drained

Dressing:
1/2 tsp salt
dash of pepper
1/4 cup vegetable oil
1 Tbsp chopped parsley
2 Tbsp sugar
2 Tbsp vinegar
dash of Tabasco sauce

In a small pan over medium heat, cook almonds and sugar, stirring constantly until almonds are coated and sugar dissolved. Watch carefully as they will burn easily. Cool and store in air-tight container. Mix all dressing ingredients and chill. Mix lettuces, celery, and onions. Just before serving add almonds and oranges. Toss with the dressing.

Notes:
Anita served this salad at Craig & Becky's rehearsal dinner and Eldora loved it so much she asked for the recipe and now makes it often.

Gingerbread Cookies

4 oz Jello butterscotch pudding (now it is 3.5 oz!!) mix (not instant!)
1 1/2 tsp ginger
1/2 tsp cinnamon
1/2 tsp baking soda
1/2 cup butter
1/2 cup brown sugar
1 egg
1 1/2 cups un-sifted flour

Chill, roll 1/8".

350 degrees fo 10-15 minutes. (Mine are usually baked in 5-6 minutes--watch!!!)

Crumb Griddle Cakes

1/2 cup sifted flour
1 Tablespoon baking powder
1/2 teaspoon salt
1 1/2 cups milk
2 eggs
1 Tablespoon oil
7 slices white bread broken into pieces

Sift flour, baking powder and salt into a bowl. Put the milk, eggs, and oil into blender, cover and process at Lo. Remove feeder cap and add bread while processing. When mixture is smooth, add to flour mixture and stir quickly until well mixed. Bake on lightly greased griddle until brown.

Yield: 8 to 10 pancakes

German Pancakes

4 eggs
1 Tablespoon sugar
1/2 teaspoon salt
2/3 cup milk
2 Tablespoons soft butter
2/3 cup sifted flour

Heat oven to 400 degrees. Butter well two 9" cake pans. Put eggs into OSTERIZER container, cover and process at Lo until light yellow in color. Stop OSTERIZER and add remaining ingredients, cover and process at Lo until smooth. Pour into prepared pans and bake for 20 minutes, then reduce heat to 350 degrees and bake 10 minutes. Slide onto hot plates. Serve with lemon slices, powdered sugar and butter. Syrup, jelly, honey or fruit-flavored butters may also be served.

Yield: two 9" pancakes.

English Muffins in a Loaf

2 yeast
6 cups flour
1 Tbsp sugar
2 tsp salt
2 cups milk
1/4 tsp soda
1/2 cup water
cornmeal

Combine 3 cups flour, yeast, sugar, salt, and soda. Heat liquids until very warm (120-130). Add to dry mix heat well. Stir on remaining flour. Spoon into two 8 1/2 x 4 1/2 inch pans that have been greased and sprinkled with corn meal. Sprinkle tops with cornmeal. Cover and let rise ~45 minutes. Bake 400 degrees for 25 minutes. Remove from pan and cool.

Slice and toast.

Dr. Billing's World Famous Dressing

Take 2 loaves of dried out bread and trim off the outside crust. Then cut the loaves into chunks about hand size. With a fairly course grater, finely crumble the chunks into a large par.

Have someone who does not cry easily chop a medium size onion into very fine particles. This is to give the dressing a certain amount of tang or "oomph". Stir the chopped onion into the grated beef and add just enough salt to tast right.

Then add fresh powdered sage, shaking it lightly as you stir it into the bread. PULEEEEESE, do not use too much sage--just enough to taste tangy, but not to gag you.

Now comes the test of your generosity. If you are stingy or if you like the usual common soggy (if you will excuse the description) dressing ...... stop right here ...... Melt a whole pound of good butter and ahve your helper or husband pour the melted butter slowly over the mass while you stir it in evenly.

That is all there is to it--the dressing is all made and complete. Don't add another solitary single thing. DO NOT MOISTEN WITH WATER. The finished product will be a golden color, still light and fluffy although slightly moistened with melted butter. It's so tasty you can almost eat it as it is.

Now to put the dressing into the bird. Have someone tip the turkey up on the back of its neck and spoon in the dressing. Shake the carcass slightly to settle the dressing. DO NOT PACK THE DRESSING DOWN. Don't even push it down with your spoon. Merely spoon in all the bird will hold and stop there and sew up the incision.

This dressing will not go as far as that soggy dressing because everybody will be hollering for more. If you have some "makins" left after filling the bird, place it in a casserole and on top lay the neck, gizzard, liver and heart. Slide this into the oven toward the end of the roasting period and you will have a bit extra for the "second helpers". It won't be quite as good, but still better than the usual soggy kind.

Bonnie's Potato Casserole

1 lb 10 oz hash browns frozen (used to be 2 lbs)
1/4 cup melted butter
1/4 cup chopped onion
2 cans cream of chicken or cream of celery soup
1 cup sour cream (low fat)
1 cup low fat grated cheese

Bake 1 1/4 - 1 1/2 hours at 350 degrees.

Crushed corn flakes on top & some shredded cheese.

Mock Chicken Legs (From 1940)

Main Course: Eldora

1 nice round steak
equal or lesser amount pork steak or roast
corn flake crumbs
1 egg
salt
pepper
onion
shortening
wooden skewers

Cut meat into 1 - 1 1/2 inch pieces. Thread on skewers alternately and mold with your hand to skewer. (Here you could refrigerate until needed (covered).) Heat shortening in fry pan. Dip the "chicken legs" in beaten egg combined with salt & pepper then dip in corn flake crumbs. Brown in hot fat, arrange in baking pan, cut some onion on top, a little more salt & pepper. Cofer with aluminum foil. Bake 350 degrees about 1 hour. Remove foil near end to make them crisp. (You'll want to taste to be sure seasoned just right.) Delicious hot or cold.

Dudley said this was one of the reasons he married me! This and Helen's chow mein & my popcorn popper and radio phonograph!!

Lime Frosted Punch

3 envelopes unsweetened lemon-lime soft drink powder
2 c sugar
6 c cold water
2 or 3 small frozen lemonade (or 1/3 c lemon juice)
3 c pineapple juice (or drink)
1 qt lime sherbet
1 bottle 7 Up or Ginger Ale

In punch bowl combine all except sherbet & 7 Up. Stir.

Blend 1/2 of sherbet into punch. Top with remaining scoops of sherbet. Rest bottle of 7 Up or Ginger Ale on rim of bowl, carefully pour. Stir gently.

Makes approximately 36 servings.

Eldora's notes:
I made ice rings of lemonade. I do so much 'by guess by gosh' so you have to taste a lot. All the kids loved this.
