Spinach Lasagna

1 pound monterey jack cheese, grated
8 oz cooked lasagna noodles
2 pkg frzen chopped spinach, cooked & drained
1 cup grated parmesan cheese
2 punds cottage cheese (may substitute part sour cream)
2 eggs
1 Tbsp parsley
salt, pepper, garlic powder to taste (1/8 tsp or less??)
2 Tbsp mlted butter
1 chopped tomato for color

Mix cottage cheese, eggs, seasonings.
Grease 13x7 pan
Layer

  1. noodles
  2. cottage cheese mixture
  3. monterey jack cheese
  4. spinach
  5. parmesan
  6. repeat

Drizzle with melted butter.

Bake at 350° for 30 minutes.

Serves 8 generously.
