Spinach-Strawberry Salad with Goat Cheese Bruschetta
(for the salad)
6 cups spinach
2 cups halved strawberries
2 tbsp toasted slivered almonds
- Combine & shake vigorously:
1/4 cup sugar
2 tbsp balsamic vinegar
1 1/2 tsp toasted sesame seeds
1 1/2 tsp olive oil
3/4 tsp poppy seeds
1/4 tsp sweet paprika
1/8 tsp salt
- combine spinach and strawberries
- pour dressing over salad and toss to coat (don't do too far in advance or spinach gets soggy)
- top with almonds
(for the bruschetta)
3 oz goat cheese
6 1-oz slices bread
Toast french bread and spread goat cheese over slices.
Serves 6
